No I haven't, but will! Can you help explain it a bit for me?

EI flies from MCO-DUB-BCN.
MCO-DUB I should be able to get business class
DUB-BCN I will get Coach

United should be able to book that over the phone with my miles, correct?
What about seat selection?

Anything else obvious I am missing?

Did you call UA to check on MCO-DUB-BCN on Aer Lingus? (The DUB-BCN segment is all Coach, but EI offers Business Class on its TATL flights.)
