If I book the cheapest ticket I can find, will I be able to cancel the flight and receive credit for the return leg (minus change fee) after the departing flight? If so, is there a way to know how much credit I would get since delta only shows the total price and does not show the values of each way? If there is a better way to accomplish this please let me know. Thanks!
You might possibly receive credit for the price difference between the fare you paid (for the return leg) and the cheapest one-way fare at the time. However, the one-way fare is typically more expensive than cheap round-trip tickets so you are very unlikely to actually receive a refund in practice.

Airlines are pretty good at protecting their pricing models - cheap one-way tickets would interrupt many of them.
