My wife wouldn't even try cheese for most of our marriage. It wasn't the taste but the claggy texture. I managed to convince her to try it "for me" and now - although she won't touch cheddar type cheeses - she loves soft not over smelly goat cheeses. What finally did it was a wedding anniversary meal I arranged for us at the Negresco at Nice and they had a full time cheese person in their kitchens. I told them in advance what sort of cheese would probably work and they laid on a great cheese course. Worth every penny. I now have wife that i can share some cheese and grapes and wine with. A real joy.
