To the specific question of CARES on Air France, I used it with our 2 year old FCO-CDG-LAX earlier this year and they did not have any issues with it. In general we have had a lot of success with CARES and our almost 3 year old son (probably 20 flights using it so far).
I agree with the others on finding alternate transit into Paris or bringing the carseat. We always bring the carseat with us for car travel.
