Even though both are lay flat beds, does that mean that SAS would have more legroom for those of us over 6' tall?
Or is the fact that they're both lay flat sufficient enough in that they both have equal legroom?

Go with LX. Legroom is not a concern with any of these airlines but LX provides a flat bed for 2k less than VS. However, people as tall as you and me should avoid the C "throne" seats. While they are nice at day the space for the feet is a little tight for sleeping.
