I think the idea is that earphones may block out safety messages/announcements, etc. during takeoff and landing. (I don't necessarily agree with this).

Air Canada has a very specific standard announcement on every flight that only "ear-bud" style earphones plugged in to the aircraft's entertainment system may be used on takeoff and landing.
