I'm considering a BA or Hyatt card with chip-and-signature, but we already have a lot of credit cards, several of which have no forex fees, or a 1% fee offset by rewards. I'm not into churning cards and it's a pain to keep track of a lot of card accounts. Plus there are the annual fees to consider.

We can use one of our no/low forex fee cards day-to-day when traveling abroad, and just pull out the chipped card for the rare situation like adding funds to our Oyster cards at a machine. We travel internationally all the time and the "need" for a chipped card has been minimal. It's just a convenience.
