Haven't seen these cards in a while.

I saw no cards at the Hilton Madrid Airport in May, but there was an obvious cook behind a bar all along one end of the area the breakfast was served in. (But the cook would disappear for a short while now and then, so if you didn't know he was there and just glanced once, you might have realized it.)
Are you sure the cards were tied to the availability? I find most cards at hotel restaurant tables, Hilton or otherwise, are promoting a feature, and the lack of the card hardly ever means the feature is gone, it usually just means they've stopped promoting that and are now promoting something else (or giving promoting things a rest).
