If you send in comments thru ac.com with the flight number and date, my impression is that the feedback makes its way back to the SD/FA and this way their good service gets recognized by the company as well as by you.
I've tweeted great service by a concierge to ACTT at and they told me they pass it on to the concierge. Earlier this year I had one of the Frankfurt concierges do an awesome job and get me on to a "full" Lufthansa flight back to Canada after my AC flight was cancelled which saved me from spending the night in Frankfurt.
