If you are willing to drop $200+ a night then Victoria House in Belize is REALLY nice.
It is on Ambergris Caye. Really nice place and totally worth the money.

If you are going inland then I will highly suggest Table Rock Lodge. Small outfit that is affordable. Super GREAT people run the place and their food is REALLY good.

Belize was awesome. Really enjoyed my week down there.
