In practice, DL allows both one in-route stopover and one open jaw despite what the website says.

For example, I have done this as an award:

LAX-CDG-VCE (open jaw) FLR-CDG (stop) LAX

What you want should be do-able if you can get CDG-NCE availability on AF.
If you can't, you might have to pay for the TGV train from Paris on your own.
Or fly to MRS from CDG.

FCO-NYC might have to be on either AZ or DL if you cannot get FCO-CDG-NYC availability on AF. Again, you might have to start your return from Milan, VCE, or FLR if you can't get FCO. At least the Italian trains are pretty cheap.
