With the move to Sodexo and the push for the Luxury Bar I suspect all SCs will have bartenders, probably sooner rather than later.

On another note, walked by the old PHX SC last weekend. No activity going on, but one of the bartenders in the tequila bar thought they may be opening a new eating establishment in that space. Who knows......
