Once booked, and I phone AA asking them to change to the later flight, will they reprice the whole itin or just the return leg?

If you try to make the change after it is ticketed, the whole thing would have to be re-priced. If it is still on hold, the agent should be able to retain the price on the outbound, and give you the new price/itinerary on the return. Call and find out. Tell them exactly what you are trying to do.
