While you could use Sapphire in the UK it will be tedious because merchants expect cards with an EMV chip, and you will frequently need to explain to the sales assistant how to swipe the card. Start with this document:

If you want to earn Ultimate Rewards points the JP Morgan Select card is a Chip & Signature product very similar to Sapphire, but there is no bonus for use at restaurants, and no sign up bonus.
