The American version of "black pudding" is called "scrapple" you can find it in the mid-atlantic states. It consists of corn meal, spices, and organ meats that are first stewed and then solidified over night in the refrigerator, cut into strips and fried.

The more civilized version (that I much prefer) is called "goetta" and is available only in Cincinatti and southern Ohio. Goetta is made with beef, pork, spices and pinhead oats. It is similarly stewed, refrigerated, slicd and fried.
