Based on how it's written, it certainly seems to suggest a cod fish from the Amazon. However, it could also be a reference to Michael Cordua, who was a member of the CO Congress of Chefs and appears to be part of the new UA team. It seemed like a disproportionately large number of dishes in PMCO BF were Latin-inspired recipes from Cordua, and he runs a number of restaurants in Houston, including Amazon Grille.
