There's absolutely no point stressing about it until you are actually there and have landed at LGW. Personally I find easyJet to be fairly punctual (they seem to build some padding into the timetable) and quite efficient about baggage claim. So, there's no point stressing.

However, try to sit near the front and sprint for passport control - that's probably the biggest factor that you can affect. After that it's in the lap of the Gods, but I should imagine that most days you would make it.
