I'm reminded of Lee's Deli in SF's FiDi that carves turkey to order for their sandwiches. Same with Jan's, right next to my office in Menlo Park. Sometimes a bit dry, but between the fresh dutch crunch bread, a few slices of avocado and a dollop of mayo, I hardly notice.

If I have to do deli turkey, I prefer smoked. Seems less watery and has more flavor.
