Usually you buy your duty free from the shop and the shop then delivers it to the gate as you're boarding the plane. Hong Kong is one of very few exceptions to this and do not allow duty free to be delivered to the gate for flights to Australia. Bringing duty free booze back to Australia is no issue if you're arriving from most countries.
