With regards the UAE, Canadians transiting airside through Dubai do not require a visa under any circumstances. Don't worry about the scary half-baked-fact-mongering in the Canadian media. I have Canadian friends/colleagues who do this transit very regularly without ever a single issue.
My turn for the lack of plain English it seems! Visas for the three African countries are all in hand, it was Dubai I was unclear on - especially as there is specifically a 'Transit Visa' on the UAE sites! Thanks for the information!
