Depending on how much time you have in HKG, consider going into the city. Find a hotel right at the airport express train station, don't mess with the shuttle buses, and remember that you can check in for your flights (including USA carriers to USA) and drop bags anytime during the day of your flight, returning to the station when it's time to take the train for your flight. At Kowloon, the choices are W and RC, both can be expensive but fabulous, and you have great views and pools even if you're not in the most interesting place in Hong Kong (but good international upscale shopping in the attached mall).
