They should open up slots if/when someone cancels. They normally schedule several people for the same time slot, depending on the size of the room, I suppose. At IAH four people were in the same time slot with me.

It's not exactly an 'interview' per se - they check your paperwork and passport, show you a video explaining the rules and how the program works, then take your picture and fingerprints and that's it.
