The Holiday Inn in Corstorphine, Edinburgh would be a good choice. Its on the west side of the city centre, next to the zoo and directly on the main road from edinburgh to airport/livingston. Give you will be going in the opposite direction to the majority of traffic, it should be about a 35min journey to/from Livingston.
Its also 5mins on a bus to the City centre, or a 40 minute walk. But you avoid all the parking hassles with staying nearer the centre.
Easily the best one unless you're desperate for city centre action and are happy to get the train to Livingston.
Really nice Hotel, next to the Zoo, has very good facilities and a buzz in the bar and as has already been said you'll be travelling the opposite way from the traffic most of the time, with Livingston a 10-15 minute drive
