It's fairly uniform across the country, with the exception of New York City, where the standard restaurant tip is more like 20% (there's wiggle room both up and down, but where most of the rest of the U.S. would leave 15% for standard/adequate service, New Yorkers will leave a bit more and trend towards 25% for excellent service).
