My question is: would I be able to check in my Hong Kong bound luggage at Terminal 5 on July 6th, or would I have to schlep everything to the EU first?
I have checked my bags in at a connecting point so I do not see any problem (although in my case it was excessive shopping I did at the connecting point and I did not want to carry it).
However, I am not sure if they would let you check your bags in at LHR before you take the EU-LHR flight. Someone else will come along to tell you their experience, I'm sure.

7 hours would be more than enough unless there is a horrific delay. However, your ticket to HKG may not be protected - BA is not obliged to do so on as your LHR-EU flight is on a separate ticket. They may well do so, but this is the risk you take when you do an ex-EU.
