It isn't the flight that has the different code it's your ticket, The first letter refers to the cabin you're entitled to, the second is your fare class. So you might have a ticket for Club World bought with a bunch of miles you redeemed which would be J/U etc.
what if they want to make a new booking class? They've used all the letters up.
