Yanking the 330 abd replacing it with the 673 is never a decision made lightly but I sympathize that it seems to happen with too much frequency. There is no guarantee it won't happen on any given day. This problem should be minimized when the new big birds arrive next year. Until then it's a gamble.
I say not lightly because the galley contents and containers have to be rebuilt by Cara, the aircrews have to be reassigned or juggled around and the maintenance checks/cycles have to be legal.
That kind of switch is certainly frustrating for you but it is also costly to AC.
