I ended up staying at Inle Resort (NOT Inle Princess). I had one of the over water bungalows at the front of the property with great sunset views. Inle Resort is one of the closest to the entrance to the Lake so the trip to/from town is shorter. I thought it was quite nice, although the restaurant prices seemed quite high to me. Nice breakfast spread though. Had a bit of an ant issue in my bungalow.
Might be worth considering. I didn't book directly though as I had used a travel agent and they took care of everything.
