You can call US anytime to split the PNR, so let the phone agent put all 3 of you on one PNR (as required by the cert) at booking, and wait closer to your Gold upgrade window for another call to split.
I've never tried to split the PNR at booking because I'm worried about incorrect CC charges showing up. I'd rather have one PNR to verify correct amount and info (name spelling, etc), and then do another quick call nearer my Preferred window to split the PNR.
