I guess i could also do sfo-hkg then LAX to HNL two months later? wuld need to buy a tix to LAX then back from HNL?

AA awards are one-way, so forget about your outbound for a minute. You cannot fly HKG-SFO-HNL on a single award because Cathay Pacific does not publish a fare that allows that routing. While AA doesn't forbid "backtracking" per se, fares generally only allow a reasonable amount of extra mileage over a nonstop flight. The relevant fare is HKG-HNL; SFO is quite out of the way.
CX's published fares HKG-HNL allow a maximum permitted mileage (MPM) of 6781. AA allows you to exceed that by 25% on awards, maxing out at 8476mi. HKG-SFO-HNL is 9325 mi. You could instead fly onto somewhere such as Mexico or the Caribbean (assuming CX publishes a fare origin to destination allowing such routing), as stopping in SFO is likely to not exceed MPM by more than 25%.
