No different that why many of us go to states/countries that do not accept us... we want to go for the cultural experiences or other reasons.
I think you're assuming people select Atlantis cruises based on their destinations. I think for most Americans, the Caribbean is the Caribbean. If you want to do a gay cruise, there aren't so many to choose from, so you'll go on the one that has convenient dates
