Sebo is an imitation of a Tokyo hole-in-the-wall place, Ino is one.
I disagree that Japanese ownership and/or training is required to run a great sushi restaurant, and I do consider Sebo great. And I do not think the owners are at all nice (unless you are a very good looking woman at the counter), but they do know their ingredients.
