I'm not sure what you mean by "true sushi fan," but I've lived in Japan for several stints and go back occasionally, and I think Sebo is about as close as it gets to what one finds in many of the hole in the wall places in Japan. Yes, there are other non-Japanese things on the menu, but the menu is driven by the available ingredients and not by what diners expect, which is very Japanese IMHO.
Sebo is not Japanese owned and the chefs are not Japanese trained. As nice as Michael and Daniel are, they aren't Japanese born and bred chefs. Ino from Ino Sushi is.
Sebo is an imitation of a Tokyo hole-in-the-wall place, Ino is one.
