Sounds like you have a good plan. I don't think you're being terribly over-ambitious. You have a lot of time, and the distance from one place to another really isn't that great IMO.
I'm headed back to SW Ireland myself next week and will visit many of the same places. We plan to take the ferry across the River Shannon instead of driving through Limerick, and we might take a boat trip to the Aran Islands or a harbor cruise from Dingle. I'm a bit of a foodie, so we'll also probably stop at the Burren Smokehouse, the English Market in Cork, the Midleton distillery, and various spots for craft beer. Kinsale is a good foodie destination as well.
Most of my favorite places on your route are near Dingle, including Connor Pass and Inch Strand. Definitely take your time through there and in Connemara. I understand the urge to rush to Dublin from the Beara peninsula, but I wouldn't cut out the Rock of Cashel and Kilkenny. We really enjoyed both.
