To the OP, I think that the UA policy of only one lap child in a seating section will torpedo your plans regardless of the number of oxygen masks. I would call UA and ask, but be prepared for them to quote their rules (
as per the website)
If the middle seat sells, swap aisle/aisle with the person across from you. But if you're in E+ a slightly better chance of not having that middle taken.
Though, yes, if you can't book it like that, then all is for naught. But certainly don't take the last (god-awful) nonreclining seat.
