Tanks are in the same place and the same size; the airframe itself is exactly the same between the longhaul and shorthaul aircraft. Shorthaul aircraft have a lower takeoff weight, so you would notice a shorter takeoff run and faster climb, but not much else. I haven't flown the aircraft, but would suggest that a longhaul aircraft at the end of the flight handles much the same as a shorthaul aircraft at the end of the flight once the fuel has been burned; Mr Boeing makes wonderful aircraft that are stable in handling across their payload ranges.
