At the end of the day, Japanese are their main demographic so there's always a tradeoff to serve a Japanese influenced dishes vs something more authentic.

And to view this from the other side, this is a celebration for linking Japan and Boston so this can be viewed as adding Japanese influence to Bostonian's familiar dishes to introduce Bostonians to Japan (or leave them a memory of Japan as this will be only available on ex-NRT flights).
