I imagine this would be primarily in Paris where there are Michelin-starred Chinese restos (FWIW since I never tried any). Not so much in the smaller provincial cities and towns.
Well, AFAIK, France has the second largest population of vietnamese origin outside the Indochinese peninsula (the US being the largest one). Clearly, the majority will be in the large cities, especially Paris. However, Nguyen is far from being an unusual name in France.
