I'm sorry your wife was ill, it's never nice to have food poisoning. The problem with your case though, is proving the illness came from the meal on the flight. If nobody else complained, it's highly unlikely that the cause was the onboard meal. Food poisoning can sometimes take several days to show, and that's why it's so difficult to pinpoint exactly what caused it.

Apart from that, I have no advice, sorry.
