Thanks to everyone for the great ideas. It looks much more possible now. There is availability to DEL but its all via Europe, so my stopover in SE Asia looks unlikely.

Nope. Apply for the Indian Transit Visa while you are in KTM. I did it while I was there. The cost if you apply there is about $36, or about 36,000 Nepalese Rupees. That is why I waited until I got to KTM.Go to the SBI Bank which handles Indian visas and is outside the British Embassy near Tridevi and Kantapoori. The visa office takes Nepalese Rupees only. I went there, and there was no line. This was about the only thing in KTM that was even remotely organized. They will need a copy of the first two pages of your passport, a copy of your onward ticket from Delhi and the money. Nepalese only; no American dollars accepted. You will leave your passport, and return at 1630 the same day and pick it up and the transit visa will be inside your passport. I am looking at mine now and the transit visa was good for 5 days. And I may be wrong, but I am not sure you even need the visa if you stay in a certain area inside the Delhi airport between flights, but please check that out.
