Done this at checkin at the gate and onboard. An extra empty seat in coach always beats a seat in F when with lap kid.
Your approach should depend on flight load: if light you can do it at check in if not then at the gate or after boarding. At the gate make sure there is a clear understanding that the seat next to you will remain empty (especially when there are several GAs)
