Michelin is pretty hit or miss on Japanese restaurants. Don't think the reviewers really know Japanese food. I'm a big fan of kaiseki now, but it takes a long time to acquire a taste for it. Got taken to a lot of kaiseki on business dinners when I was younger. With the small dishes and the leisurely pace, I got hungrier and hungrier as the meal progressed. After profusely thanking the hosts after the dinner, I'd sprint for the nearest BigMac.

Agree that the well known Kyoto ryokans are over-rated.
Like you said though, it is based on acquired tastes I think. It's funny though, no matter how you get used to it, nothing tastes like home like a Japanese Big Mac! haha
