A routing rule that specifies connecting cities in that manner means the connections are optional and you can delete as many as you want. It doesn't appear there are any flights from HNL to WLG, so that's why your routing didn't work in ITA. Haven't tried it, but I'd guess HNL-AKL-WLG-SYD should work, since there are flights on all those city pairs.
