I don't believe there is a rule that says max. 1 stopover for each direction.
If I am not mistaking, HKG is your "destination" with SIN and KIX/ITM as your stopover cities. As going from YYZ to HKG, you can go thru Europe, which is your case. Hence, SIN is between your YYZ and HKG route.

Maybe others that are more experience can comment if I am correct or not.
