You will pay the rate for the time you used the car. If you no longer qualify for the weekly rental because you bring the car back early, they will most likely change it to the daily rate. Same thing with weekends, if you return it early and it no longer qualifies for a weekend rental, they will adjust the rate to the weekday rate.
A weekly rental will count for however many days you have the car, so if you have it for five days even though it's a weekly rate, you will get five days credit, seven days if you keep it seven days.
