Oh, for sure they will be. I can be pretty insistent about this particular issue, though I don't mess around when it comes to food. The brokers I've known for a long time are aware, so they're ready for me (this is how I was introduced to Rajdhani in Crawford Market, for instance) and whenever possible I do my own research beforehand and just tell them where we're going! I rarely ask hotel concierges for suggestions--they are always hesitant to suggest anything interesting or off the beaten path--but I can sometimes get a good one out of them.
