Hoboken resident here:

Breakfast:
La Isla - Cuban place, get the Stuffed French toast. Wear loose fitting pants
Stacks - Pancake place. Pretty good
Court Street - Slightly more fancy, but epic brunch.
Anthony David's - Get the bourbon glazed donuts
