Do you ever mention to them that the published TSA guidelines (the ones the public is allowed to see) all say that jewelry never needs to be removed?

Pretty blunt, there. But consider the source of both that statement and the demand that the jewelry be removed, and your confusion will end as you realize that one's [redacted ad hominen]. (And I'm not saying which is which, especially since the two sets are not mutually exclusive.)
