QK runs their CRJ 700's on this route, complete with IFE at every seat and a J cabin. It's not bad, all things considered.
But as for the OP's question, I'd opt for YYZ-MSY on QK, which gets you in at around noon, and then drive up to Baton Rouge. MSY is west of New Orleans proper, so you get to skirt around most of the traffic generated from the city. It's really not that much of a drive at all.
The return flight is at 12:35pm, which gives you plenty of time to drive back to MSY from Baton Rouge in the morning.
