Not sure where you have been reading but service is available when you want it. The only difference is it is served on one tray only so the salad size is different. In addition there is the snack attack available. On my last flight a couple weeks ago it was actually brought down the aisle once during the flight. Never saw that before.
BTW the longer you wait to pruchase your ticket the lower you will be on the upgrade list. Will be the same Japan, Europe or wherever you decide to go. @:-)

I'm using what I've learned above and playing around with ORD/SGN.
It's coming in much lower at $354. each (using vouchers) and Viet Nam is warmer in April.
Yeah, we'd have the 6 hours in coach, but it's JAL coach and CS is helping out securing SWU at booking.
